Homemade Granola with Quinoa

We welcome spring (mostly in our hearts, because the weather does not agree) with this fresh idea for making you own granola at home. Having as a base the quinoa seeds and flakes, combined with the best and healthiest ingredients, this granola will exceed your expectations and you will finish it in no time. It is also a great idea to offer this homemade granola as a present in a nice mason jar, now that Easter is close and family dinners and reunions are being prepared. Trust me it will be very much appreciated!

Generally in any type of granola you can add the ingredients you love. Maybe you want some more dried fruit in it or coconut oil instead of olive oil. Maybe some macadamia nuts. You can experiment according to your preferences! Don’t forget to have a balanced amount of dry and liquid ingredients so that it will not be totally dry when it will be cooked. Eat it with some fresh Greek yogurt and it will become your favorite snack in the morning, but also throughout the day. You can even eat it with your favorite ice-cream! Ingredients
50gr oatmeal
40gr quinoa seeds
50gr quinoa flakes
20gr pumpkin seeds
20gr sunflower seeds
20gr linseed
50gr mixed nuts, unsalted
100ml fresh orange juice
2 tbsp olive oil
50gr dried apricots
30gr raisins
1 tbsp agave syrup

Method
Warm the oven at 180 Celsius. Put the oatmeal, quinoa flakes, quinoa seeds, pumpkin seeds, sunflower seeds, linseed and the mixed nuts in a bowl. Add the fresh orange juice and the olive oil and mix it well with a big spoon.

Add the mixture in a roast pan lined with parchment paper. Roast the granola for about 15 minutes in the oven until it turns golden brown. Mix frequently with a spoon so that everything will be evenly cooked.

Take it out of the oven and put it aside to cool. Cut the dried apricots in small square pieces and add them along with the raisins in the granola. Sprinkle with the agave syrup for extra natural sweet taste. Store it in a glass jar and keep it in a cooled place. You can eat it with fresh yogurt and fruit.
