Vegan Blueberry Muesli

This vegan muesli is absolutely the best option to start your day. It contains valuable vitamins and enough energy so that you will not feel easily hungry – as I do if I eat only cereal in the morning. You can use honey instead of agave syrup but also any kind of berry you wish. Blueberries are indeed more expensive than the rest, but they are also the tastiest! You can enjoy the muesli plain, with yogurt or even with ice-cream! It can stay up to 10 days in a cool and dry place, but trust me you will eat it before that 😀 And what can beat your own homemade muesli? If you give it a try, please let me know at the comments.

Prep Time: 5 minutes, Cooking Time: 30 minutes, Yields up to 12 pieces

1 big ripe banana
4 tbsp agave syrup
2 tsp cinnamon
50gr pecan nuts
100gr Medjool dates pitted
2 tbsp chia seed
120gr oat-flakes
20gr linseed
150gr blueberries


Preheat your oven to 180 °C. In a bowl puree the banana with a fork. Add the agave syrup and the cinnamon.

Chop roughly the pecan nuts and the Medjool dates in small pieces. Add them in the bowl and mix them good along with the chia seed, the oat-flakes and the linseed.

If the mixture is too dry add some more agave syrup and if it is too liquid add some more oat-flakes. Add in the bowl the blueberries and mix good.

Transfer the mixture to a lined with parchment paper 20x30cm pan. Press good with your fingers. Put the pan in the oven and bake for about 25-30 minutes.

Cut the warm muesli already in pieces and let it cool down completely.
