Grilled chicken with pasta and parsley pesto

Following our monthly summer dishes I present you the one and only Grilled chicken – parsley pesto combo! Perfect for a light summer dinner party! Grilled chicken is always one the best choices when you expect guests and you are trying to find a recipe that will blow everyone away but it will not be too complicated for you or turn out a disaster. Or you just want to spoil yourself with some easy inspiring cooking! I have to tell you this one is a sure success. The taste of the grill fits so good with the pesto that everyone will ask you for this recipe. With some fresh salad on the side like the Chickpea Salad with Hummus Dressing aside you will have a memorable dinner!
(The proportions given are for two people. Adjust them according to your needs)


1 biological lemon (for the zest)
300gr pasta of your choice
2 chicken breasts
extra virgin olive oil
20 gr fresh parsley
40 gr Pecorino Romano cheese
40 gr walnuts
fresh ground pepper

Grate the zest of the lemon. On a pan put water and cook the pasta according to package directions.

Heat the grill pan. In the meantime marinate the chicken breasts with 2 tablespoons of olive oil, the salt and pepper. Grill the chicken for 12 minutes or until tender and soft. Turn it and do the same for the other side. Patience and constant attention are basic keys to a successful grilling.

Put the parsley, the walnuts, the cheese and the lemon zest in a food processor and mix the ingredients into a fine paste. Through in some olive oil until the pesto is smooth. Put the pesto in the pasta. Cut the chicken in slices and serve it with the pasta.

Some white wine on the side and you are done!
